Stir-fried Watermelon Rinds

In the heat of summer, watermelon, especially refrigerated, is my go to for something sweet that will cool me down and quench my thirst. One day I realized that I could make use of watermelon rinds instead of throwing them away. The dish turned out great: fresh, tasty, and healthy: a great choice for a hot summer day.

 

 

 

 

夏日的一点清新 -- 西瓜皮的新生

 

 

上次买的一只西瓜不但瓤红味甜, 连瓜白部分也清脆甘美多汁, 我差点连绿皮都不放过(just kidding :)

 

天气已经微热, 很想吃点清淡的小菜, 便灵机一动, 尝试了几回清炒西瓜皮. 

 

 

原料:

  • 西瓜皮: 半磅, 去掉绿皮, 只留瓜白部分, 切成细条备用

  • 红甜椒: 半只, 切丝备用

  • 菜油:     1大勺

  • 盐:         少许

  • 香油:     1小勺

  • 小香葱:  4-6 根 (切成小粒)

 

做法:

  1. 炒锅烧热, 倒入少许油, 放入瓜条略炒, 放入少许盐, 再略炒使均匀入味, 立即盛出.

  2. 炒锅内倒入少许油, 放入红椒丝略炒, 放入少许盐, 再略炒使均匀入味, 将刚才炒好的瓜条倒入, 翻拌均匀, 淋入香油, 洒上小香葱葱花, 立即盛出.

 

 

 

tbsp        =          tablespoon (15 ml)

tsp          =          teaspoon (5 ml)

 

Ingredients:

  • Watermelon rinds : 0.5 pound (remove the green skin part), cut into slices (use the watermelon rinds that are thick and juicy.)

  • Sweet red bell pepper: half, cut into slices

  • Vegetable oil: 1 tbsp

  • Salt: ½ tsp (or to your taste)

  • Sesame oil: ½ tsp

  • Chives: 3-4 (chop into pieces that are the width of a nickel (2 millimeters)

Directions:

 

  1. Heat wok, when hot, add in ½ tbsp oil, add in watermelon rinds, stir fry for 1 minute, add in ½ tsp salt, stir fry for 1 minute.  Transfer to a plate.

  2. Heat wok, when hot, add in ½ tbsp oil, add in sweet red bell pepper slices, stir fry for 2 minutes, then add in ½ tsp salt, stir fry for 1 minute.

  3. Add the cooked watermelon rinds back into the wok.  Stir fry for 1 minute, so that watermelon rinds and sweet red bell pepper slices mix well and evenly. 

  4. Add in ½ tsp sesame oil, and the chopped chives. Stir quickly for a few seconds.

  5. Transfer to a plate, ready to serve.

 

 

 

揽香叮咛:

  • 第二次, 我尝试把红椒与瓜条同时入锅同炒, 这样节省了一个步骤. 但出锅的成菜颜色会偏红 (见图3, 图4), 味道倒是没有太大差别.

  • 第三次, 我尝试将瓜条先用盐渍一下, 以为这样瓜条会更加爽脆, 结果效果恰恰相反. 所以对于西瓜皮, 不推荐此法.

  • 第四次, 我尝试用牛角椒代替红椒, 效果很好. 成菜略带牛角椒的微辣和清新, 与瓜条更加相得益彰.

  • 第五次, 又买了一只西瓜, 没有上次的幸运, 西瓜皮较老. 不死心, 还是用它炒了菜, 结果可想而知: “此瓜非彼瓜”. 所以, 你要是碰上这样的 “朽瓜”, 还是放弃了吧 -- “朽瓜”不可烹也!  :)
